In a muffin Tin

Left over brown rice, chicken, spinach and any other veggies from last nights supper, and a scrambled egg, bake in the over, while getting everyone ready for preschool and school, fill up the sippy cups with milk, spoon the egg muffins in to travel containers and we are out the door for multiple morning drop-offs with a healthy meal in hand

I love the simplicity of eggs on a "lettuce bun" with avocado slices, tomatoes, and red onion. My breakfast sandwich!

Warm Spinach Salad- My go to meal when I'm in a hurry

Warm (lightly saute) 2 cups spinach in 1 tbsp coconut oil
Toss 1 clove garlic minced, 1/4 cup dried cranberries, 2 oz raw chopped walnuts
and a splash balsamic vinegar with the spinach
Top with 1 oz goat cheese crumbles

Yum!

Veggie Frittata

2 cups egg (I use a combo of whites and whole eggs)
3 TBS Greek yogurt
1 medium onion chopped
1 red bell pepper chopped
1 cup spinach chopped

Heat oven to 350. Saute onion and pepper. Wisk eggs and yogurt.
Add all veggies to egg mixture and season to taste. Pour into large muffin tins, makes 6 large or 12 small ones. Bake about 20 min. I top with fresh tomato slices prior to baking, if available.

Easy breakfast:

1/4 c. oats
1 egg
Cinnamon & sucanat
Handful of blueberries
Splash of almond milk

Mix everything together in a coffee mug and microwave for 2 minutes.
If you find it a bit dry, you can add a half tsp. of coconut oil and a bit more milk and it will be creamier.

I like to prep cook so I always have cooked chicken breast, brown rice,and some kind of bean ready to go. I work from home and am typically in a slump by lunchtime, so I created this very energizing and satisfying.
Brown rice bowl -
1/2 c brown rice
1/2 avocado, diced
cubed grilled chicken breast - about 1/2 of a regular breast
Diced tomato
1/2 cup black beans (or any cooked bean, really)
Add in some coconut oil, salt and pepper, and you've got a great meal. Switch it up with whatever meat/bean/veggie you like. Spices and herbs can also add a nice flavor.
