My husband and I are actually leaving on Sunday for our yearly camping trip to Lake Superior. This year we are thinking "Clean". We have packed homemade trail mix (my husband makes that!). We will also be bringing fruit, fixins for a salad (have never done that before when camping), walnuts, almonds, turkey sausage, flax seed for breakfast and lots of water.

Looking forward to it!!

I have/would take fresh fruits, fresh veggies from my garden. I like to cook over the fire when I am camping so our favorite things to take are chicken tenderloins or cut up chicken breasts and veggies like zucchini, cherry tomatoes, onions, peppers, anything we can put on a stick in bite size pieces and roast over the fire. Our boys used to think they could only do this with hot dogs and marshmallows until I brought out some chicken and started roasting it on a stick and they thought that was so cool! I usually take pesto for dipping and sandwiches.

I also like to make pizza over the grill/fire by bringing frozen whole wheat crusts and whatever we feel like throwing on top. Grilled pizza is great anytime!

Also, homemade trail mix with raw nuts, natural dried fruits, oats, flax, etc.

I love to take homemade power bars, they go great with coffee/milk for breakfast.

Our favorite camp food is a clean take on chicken taco salad. I grill chicken either before we leave or at the camp site seasoned with Cajun. Add it to Romaine lettuce, frozen corn, can of black beans, tomatoes, red onion, cucumber, red and orange peppers, salsa, reduced-fat sharp cheddar and greek yogurt (instead of sour cream). I usually cut up all vegetables before we leave and put them in zip lock bags. Its a favorite among all our friends!
