When you’re busy at work all day, what’s your favorite quick, Clean lunch?

I usually have a 'snack platter' when I don't have time to stop for a proper lunch. This includes chopped carrots, celery, and cucumber with hummus dip, wholegrain crackers with a can of tuna, chopped strawberries, and a small granola bar. I lay it all out on a plate and graze while I'm working.

6 hard-boiled egg whites mixed with hummus and I eat it with a spoon!

Mixed salad greens, tinned water packed clover leaf salmon ( it is all meat! no skin and bones), cherry tomatoes all sprinkled with some sunflowers seeds and balsamic vinegar.

clean turkey, chicken, or black bean burgers with homemade tzatziki on a toasted bun (or a side salad if cutting back)- yumm!

Definitely leftovers is high on my list. If that isn't an option, I'll pick up a salad (ready made or simply the bag) from the grocery store and add a can of tuna. I always keep extra cans of fish in my desk. If neither of those tasty treats are an option, I can always make oatmeal! Quick and easy and it keeps me full and fueled!

Left overs! When you make a little extra of a clean dinner, nothing is quicker or easier than reheating what you had the night before. During the winter months I make lots of soups and most of them taste better the next day :0)
