Happy Saturday everyone! What do you put in your omelets?

I love putting green peppers/red/yellow/orange, purple onion, mushrooms and oh yes don't forget the salsa and some times goat cheese...YUM!!!

on egg , two egg whites , sauteed baby bellas, spinach and feta or sometimes I like to make an asparagus omelet with low fat swiss.

I do more of a "scramble" ...

one version is Egg whites, onions, mushrooms, tomatoes, spinach-
and just a tablespoon or 2 of reduced fat feta--

Another quick version, Egg whites, black bean & corn salsa, spinach-and
a tablespoon or 2 of reduced fat feta--

One other one--I call it mock fried potatoes and eggs...
egg whites, onions, spaghetti squash(try to get as much of the moisture out as possible before adding to the eggs)--use a little spray and a non-stick pan...a little sea salt and pepper...
the squash will brown up a little and then just tiny bit of ketsup...just a different variation and another way to eat spaghetti squash!
