I have a lot of them that I routinely eat:

grilled chicken and sliced, vinegar marinated cucumbers
jicama dipped in hummus
roasted broccoli - yummo!

1. Greek yogurt with whatever fruit I feel like that day

2. Greek fish: Tilapia or snapper usually, with the juice of 1/2 a lemon squeezed on each side and sprinkle with Greek or Souvlaki seasoning (I use Epicure). It's so fast that I usually plan to cook it on nights that I know are going to be busy.

Baked chicken breast with greek seasoning, onion, mushroom, and peppers with baked sweet potato! I make this meal at least once a week. I always do fresh fruit, such as peaches, or pineapple for dessert. Yum!

i absolutely, positively MUST have steel cut oats in the morning. this is the item that got me interested in eating clean to begin with. i saw the recipe in the "off the couch" issue of oxygen magazine. it sits overnight soaking in water and then in the morning after cooking it, i put protein powder, a diced apple, raisins, chopped walnuts and cinnamon in it. it just makes me happy!

Breakfast: Instant oatmeal mixed with FF yogurt, sometimes I add raisins.
If you want it like a parfait, leave it in fridge overnight. If not, you can eat as soon as you mix it.

Clean Eating Devilled Eggs !!! Hard Boil 8 eggs normally. Peel each egg, and cut length-wise, and discard of all yolks EXCEPT 1 ... Meanwhile, in a bowl combine the 1 yolk, 3 tbsp of low-fat cottage cheese, 3-4 tbsp of chopped green onion, a bit of hot sauce, and salt & pepper to taste, and then fill each egg!! SO GOOD and SO good for you! Highly packed with tons of protein and can use them as a snack, meal, on the go, etc. PS - everyone is so creative with their oats!! Thanks for the great recipe's.

My favorite weekly meal is salmon with aspargus! I love it so much. We had it last night for dinner and I'm already excited for next Sunday when we are having it again!

Can someone help answer; can you exchange a soy burger (morningstar chicken patties or boca burgers) for a lean protein??

Eggs! Scrambled, boiled, poached. Although at the mo I'm just doing scrambled eggs whites.
The wholegrain bread from the ECD cookbook also gets baked and frozen once a week for hubby.
The Moroccan chicken and lentils from the cookbook is a regular too, one of our friends requests it if he's coming for dinner.

FIRST! I start every morning with a whole grain bagel, topped with raw, unsalted creamy almond butter along with strong, black coffee.
