chicken breast with homemade pesto, cherry tomatoes, asparagus, broccoli and yellow pepper to funk it up a bit.

mini greek pizzas made on whole wheat thintini... 1 tbsp tomatoe sauce or paste, frozen spinach, roasted tomatoes and artichoke, pop in oven... add a bit of feta if you like first. taste so good it feels like a real treat night... nice with a greek salad but if too tired just sliced cucumbers and tomatoes on the side works just fine

here in WI we like our friday fish fry --- so I now do a baked version -- with cod or haddock--- crunchy with some seasoned cornflake coating and some roasted potatoe wedges with a little cole slaw (made with a vinegarette). YUM

I buy skinless boneless chicken breasts and make a stir fry with organic coconut oil and stir fry veggies!!! YUMMY!!!
