I think I have to use up some leftovers tonight - baked eggrolls loaded with tonnes of veggies! Then I think I will have to put a turkey in the oven - more leftovers! So then I have roasted turkey sandwhichs, turkey/veggie soup all kinds of things!

Tonight is a wrap (bowling league night, dinner has to be portable)Tomorrow: Crunchy Chicken Bites from the ECD Family & Kids cookbook with steamed green beans & baked sweet potatoesFriday: Bacon Burgers!! YUM! Clean and tasty! Mine will be wrapped in green-leaf lettuce (hubby and kids use sandwich thins for buns), plus Old Bay seasoned oven fries. Saturday: Chicken Florentine from Clean Eating Quick & Easy Meals with salad.

Bison; roast; carrots; leeks in the crock pot today! To be served with a sweet potato tonight.Tomorrow night is th Seafood and Black Bean ChiliFriday night: Salmon with Sweet 'n' Tangy Pineapple Chutney, brown rice and Sassy Southern Green Beans!Looks like a yummy end to my week!

This weeks dinners for me look like this:Wednesday: (gym night so rushed) 250g egg white, 1/2 red pepper, onion, 1/2 cup mushrooms made into an omelette with 1 slice of Ezekiel Sprout bread toasted and 1 tsp of butter (I make a double batch, eat one at dinner and another after the gym minus the toast)Thursday: Turkey zucchini burger (no bun) with 1/2 cup of baked sweet potato fries and a massive spinach salad (balsamic vinegar and olive oil dressing)Friday: Ground turkey Taco salad served on spinach greens, with no fat sour cream and 1 toasted corn tortilla

Tonight I'm going to try the Thai Chili from the January Clean Eating magazine - it looks so yummy :)
