Tonight will be salmon and a garden salad. I am craving a nice clean meal. I have been traveling for a a week and I truly fell off the plan but I am back on the clean way starting ....NOW.

Tonight I'm making my second batch of walnut & coconut encrusted chicken fingers for the week. We'll have them for dinner and use the left overs for lunches the rest of the week. http://thegetinshapegirl.wordpress.com/2010/08/05/coconut-walnut-encrusted-chicken-fingers/I like to pair it with a green leafy veggie like steamed spinach and mushrooms when I have it for dinner. So delicious!!

Tonight is on the run... I'm taking my daughter to the airport (New York, here she comes!) then heading to the bowling alley to cheer on the family team. Dinner for me is a whole grain wrap filled with lean chicken breast, shredded cabbage & spinach, and feta cheese. Yum! :-D

Tonight will be pretty simple with just a salad and a sandwich. Since I am on a gluten free diet it will be on gluten free bread, with turkey, tomato and lettuce

My hubby is a hunter so we have tons of organic game meat in our freezer. I pulled out some ground venison and prepared chili in the Crock Pot that will be ready to eat when we get home from the gym after work. It's full of veggies like onion, red, yellow & green peppers and tomatoes... 3 different kinds of beans: kidney, navy & black beans...and warming spices like chili powder, cumin, paprika, oregano & garlic. My mouth is watering already thinking about it...perfect for a rainy Vancouver night!

The weather is starting to warm up and I Love to BBQ! Tonite, we are having grilled seasoned chicken breast (chicken breast rubbed with Mrs. Dash, Southwest Chipotle, Mrs. Dash Extra Spicy, a litle bit of salt and pepper) grilled zuchinni (with the same kind of seasonings) and brown rice. YUMMMM!
