I really like my food processor, blender, and my metal, manual lemon squeezer. :-)

I would have to say my pots and pans. Several years ago, my mom and I attended the annual (semi-annual?) All-Clad factory clearance sale and I got over $1,300 worth of All-Clad pots, pans, skillets, etc. for about $350 (the stuff I got was only a "factory second" because there was a tiny scratch on the outside and they wouldn't have been able to sell it for full retail). They are great! I don't use non-stick cookware so having the high-quality stainless steel stuff is essential.

Most definately my Blendtec blender! It makes all my smoothies, raw soups, dips, sauces, and makes my whole grains into instant flour. I could not live without it.

I just bought a beautiful little Escali primo scale. It comes in a whole bunch of colours: this is the best tool in my kitchen!!

Do I have to pick just one? A great knife is essential, but having an array of perfect size containers for my meals has to be the at the top too. I work full-time so being able to cook on Sundays and create my meals for the days to come is such an advantage. Each morning, I just grab them and go!
