What Clean ingredient is in your fridge that you can’t wait to use?

Spinach and baby carrots. Since I have food allergies to raw veggies, I steam just till cooked, not tender a pot full of baby carrots and eat them alone, mixed into a salad, or a little bit of lemon juice.

The baby spinach I usually like to add in some homemade lentil soup.

I picked up an Eggplant the other day and will try it in a rattatouie (spelling) recipe this weekend for the first time!
