I have 3 children, ages 4, 3, and 1. Tonight I needed a quick meal, so I made mini pizzas using whole grain, whole wheat, organic english muffins. I cut them in half and put pizza sauce, low-fat cheese, and diced green peppers on them and baked them at 350 deg. for about 10-15 minutes. They were a hit!

My favorite go to recipe is Apple Gorgonzola Salad, we seriously have it all the time.

Put a huge serving of organic spring mix on a dinner plate, top with chopped granny smith apple, walnuts and a sprinkle of gorgonzola cheese. We usually have cold baked chicken breast in the fridge, and I would add that to the salad as well. Top it all with garlic dressing!
