Keep a list of easy go-to meals. Then you don't even have to think about it.

Or think of the meal by components. Lean protein? Complex carbs? Veggies (or fruits)? Healthy fat? And assemble.

Or get a whole grain wrap and throw in any kind of lean protein, some beans, some veggies, and balsalmic vinegar & (extra virgin) olive oil.

One of my favorites (if I'm eating alone) is cottage cheese (lowfat) and cherries.

I could go on and on.

I keep a few pkgs of gluten free, dairy free, sugar free kamut flatbreads made by Organic Oven, in the freezer and one in the fridge. They are made with organic kamut flour, olive oil, sea salt and water. Called flatbreads but they are like a small tortilla. They make awesome quesadillas with your fave filling, great pizza by placing one flatbread on the pizza pan, brush with sauce, a little grated cheese, place another flatbread on top and then add your favourite topping. Love all different peppers that have been sauteed on top along with other veggies or chicken, thiny sliced leftover steak etc place in oven for a few mins. Yummy.

I always plan the meals for the week on Sunday and do my grocery list and shopping then as well. Even if things don't quite go as per our schedule, I still have the Eat Clean basics to make a quick meal. Key is to plan!!

I keep veggies on hand, fresh and frozen, that can be stir fried with either pre-cooked/frozen turkey crumbles or tofu. Quick and yummy. I also make good salads ahead and bag them in the fridge so that time doesn't stop me from having a beautiful salad. Being prepared and well stocked is the key.

I rarely have the time to do anything BUT a quick meal. Here are my tips:

Have some staples always on hand that can add quick nutrition to any meal --
You'll never find my house without all of these items:
• frozen and fresh spinach
• frozen veggies of all sorts
• ready-to-eat baby carrots
• canned chickpeas and other beans/lentils
• organic chicken and vegetable broth
• quinoa
• garlic and onions
• lemons
• plenty of herbs and spices
PLANNED LEFTOVERS! If you have a couple of cooked chicken breasts in the fridge, dinner is practically made. Here's a typical quick meal for my family --

Sautée some onions in olive oil, add garlic, add rinced quinoa, diced leftover chicken and cook in chicken broth. In another pan, sautée a little garlic, add a whole bag of frozen spinach, a squeeze of half a lemon and let heat on med-low until the quinoa is cooked. This dinner takes about 3 minutes to prepare and is ready in 15 minutes. And it's yummy, too!

I only did my first one last night but the family LOVED it. The trick was... it was the KISS principle...keep it simple sister! I marinated chicken breasts in lemon, lime, parsley, garlic, salt, and pepper for a few hours. Then I threw lots of veggies on the grill with the chicken, went inside and put brown rice in the cooker and bamm, it was done in 40 minutes. Yes, I did grill lots of extra chicken and veggies for the week!
