I have been really trying to eat healthy since recently diagnosed with DCIS. Had a lumpectomy 2 wks ago & will be having radiation. Consequently I was very nervous about what to cook for my family for Thanksgiving. Luckily my daughter-in-law cooked a wonderful turkey with very little fat. I made sweet potatoes, Brussels sprouts, green salad with nuts & berries. Turned out good & I watched my portions + drank water with lemon & lime before my meal! No weight gain at all!!!

I went to a Thanksgiving potluck and contributed roasted veggies and a salad to the meal. The veggies included local beets, parsnip, brussel spouts, sweet potatoes, baby potatoes, garlic, olive oil, salt and pepper. Everything was oven roasted for about an hour. The salad contained chopped kale and swiss chard with raisins, sunflower seeds, green onion, grated carrot, red pepper with an olive oil and balsamic vinegar dressing.
