I chop up some scallions and add some peppers...or sometimes I make mini frittatas with them in a muffin tin and I'll add chopped up asparagus..yum!

I make an omelet or "scramble" with chopped onions, multi-colored peppers and sliced cremini mushrooms. I have enough for leftovers for another meal.

What do you do with all the yolks from the eggs since you're only eating the egg whites? I don't have a dog to feed them to, and it seems wasteful to me to throw them away.

Omelettes with LOTS of veggies. All different kinds. Goat cheese, greek yogurt, and some form of salsa are omelette staples(for me).

I eat egg whites every morning! I make a breakfast scramble on the weekend and slice it into servings for each morning - egg whites, spinach, feta, onion, mushrooms, tomatoes, and cayanne pepper!
