I have very simple tastes and often eat salads and other veggie dishes without any sauces. but when i do want something my go to ingredient and often only condoment is organic dijon mustard. it is the best choice as far as nutrition and calorie, fat and sugar. it is in most dressings i make as well. i also use rice vinegar or apple cider vinigar in place of any others as they are a fermented food and for my stomach are much easier to digest. so toss in a few mint leaves with that and a touch of walnut oil and honey and bam! you have a nice dressing.
