Mashed PB Sweetpotatoes

Ingredients

Instructions

Fit Ingredients

3 medium sweetpotatoes (300g)
3 tbs (22g) peanut flour (can sub PB2 but nutritional value will change)
1/2 c (113g) non fat greek yogurt
Sweetener, optional
Pinch of Salt

Directions

1. Peel and dice up your sweetpotatoes

2. Add your sweetpotatoes to a pot and fill with water until just covered.

3. Boil until fork tender.

4. Drain the water from your sweetpotatoes and mash (This brand of sweetpotato is so moist I was able to mash these up with just my fork!)

5. Mix in your greek yogurt, peanut flour, sweetener and salt, if using.

6. Mash really well and serve!!
