Butternut Squash, Coconut Curry Soup

Ingredients

  • Butternut Squash
  • Cellery
  • Onion
  • Carrots
  • Garlic
  • Chicken Broth
  • Red Curry Paste
  • Coconut Milk
  • Cumin
  • Coriander
  • Seranno Peppers
  • Cayanne Pepper
  • Salt and Pepper

Instructions

12 cups butternut squash, cut into cubes. About 2 medium/large squash
2 cups onions chopped
1 cup celery chopped
1 cup carrots chopped
4 cups chicken broth (check to make sure there is enough water to cook it down, you may need to add more water)
2 Serrano peppers chopped
Red Curry Paste - 1 Tablesppon
Cumin -- 1 teaspoon
Coriander -- 1/2 teaspoon
Cayenne Pepper -- dash
Salt and pepper -- to taste
Cook all this down and purée squash and add 1 can coconut milk

I don't measure my spices, I just add them until it tastes good.

Cooking Time: 90 minutes
