12 cups butternut squash, cut into cubes. About 2 medium/large squash2 cups onions chopped1 cup celery chopped1 cup carrots chopped4 cups chicken broth (check to make sure there is enough water to cook it down, you may need to add more water)2 Serrano peppers choppedRed Curry Paste - 1 TablespponCumin -- 1 teaspoonCoriander -- 1/2 teaspoonCayenne Pepper -- dashSalt and pepper -- to tasteCook all this down and purée squash and add 1 can coconut milkI don't measure my spices, I just add them until it tastes good.
