I was looking for something that would, a) be vegetarian for Meatless Monday, b) provide plenty of leftovers to pack for lunches, and c) be easy and gentle on my tummy. I found a winner!
Last night I decided it should be Pancake Thursday (I'm sure I'll still participate in Pancake Tuesday when it comes), so I decided I wanted a Clean recipe. My mom was heading for the Betty Crocker cookbook, but I said nay. I looked up this recipe instead, and we made a few tweaks. I would make even more tweaks to it because it ended up a bit salty for my taste; see my notes at the end. I topped my pancakes with banana slices and a drizzle of honey - delicious.

This was the perfect recipe for me to make on a Sunday night since it left plenty of leftovers for today's lunch. I ate all the asparagus for dinner last night, otherwise I'd have a green vegetable in this recipe photo too!

This recipe is awesome on whole grain bread with spinach leaves, or you can eat it by itself for a tuna salad-esque snack.
This is an easy recipe to make for lunch, a midafternoon meal, or even dinner! I used a whole wheat pita to make sure it was Clean.
