Yogurt Cheese

YIELD: 1 cup
PREPARATION TIME: overnight
COOKING TIME: 0 minutes

Details

Yogurt cheese is one of the most versatile foods you can have in your kitchen! You can use it as a replacement for cream cheese and sour cream and you can use it to make spreads, dips, whipped cream and cake frosting! Originally from The Eat-Clean Diet® Cookbook.

Ingredients

• 2 cups / 480 ml low-fat plain yogurt

Preparation

  1. Place yogurt in a fine mesh sieve or colander lined with two layers of cheesecloth. Place the sieve over a large bowl to catch the liquid that drips out of the yogurt. Place this set-up in the refrigerator and let stand overnight.
  2. Discard the liquid in the bowl below and you are left with rich, creamy yogurt cheese in the cheesecloth.

This really is very versatile - you can also make simple dips or creamy cheeses by adding herbs (chive, dill) and garlic etc. Great idea to try :)

Can I make yogurt cheese using a mesh filter and coffee liners, instead of cheese cloth? Suggestions?

Just to let you know, MommyParker, I asked Tosca that same question. She indicated that it would be better to use the 0% plain yogurt and strain it.
