Ingredients for Batter
• ¼ cup / 60 ml whole wheat flour • 1/3 cup / 80 ml oat flour* • ½ tsp / 2.5 ml baking powder • 4 Tbsp / 60 ml Sucanat, divided • ¼ tsp / 1.25 ml sea salt • ¼ cup / 60 ml plain, fat-free yogurt • 1 Tbsp / 15 ml melted Do-It-Yourself Olive Butter Spread (see Savory Ezekiel Bread Stuffing) • 2 egg whites • ¼ cup / 60 ml mashed bananas • 2 1/3 cups / 550 ml thinly sliced strawberries • Eat-Clean Cooking spray
* You can make your own oat flour by placing 1/3 cup oats in a food processor and blending into a fine pulp
Ingredients for Whipped Topping
• 1 cup / 240 ml yogurt cheese • 1 tsp / 5 ml vanilla • 1 tsp / 5ml cinnamon

I made this for a birthday treat for my husband and our family. I substituted Kamut flour for the whole wheat flour and it turned out great! Even my son was impressed - he said it was really good considering it was "healthy". We would make it again!

i used applesauce instead of banana once and 1/2 prune puree w/ 1/2 pumpkin another time - yummmm

I accidentally forgot to mix the remaining 3 T. Sucanat with the strawberries and it still turned out yummy! It helps you get over a sweet craving while still being 'clean'!
