Tofu Chocolate Mousse

Details

Chocolate mousse is a woman’s best friend! Served chilled after a delicious main course of Spaghetti with Pesto Sauce, this Tofu Chocolate Mousse from The Eat-Clean Diet® Cookbook will make you melt!

Ingredients

• ¾ cup / 180 ml dark chocolate chips or dark chocolate bars, broken into pieces
• 12 oz / 336 g silken tofu* at room temperature, drained
• ½ cup / 120 ml warmed skim milk or soy, rice or almond milk
• 1 tsp / 5 ml best-quality vanilla

*NOTE: You must use silken tofu for this recipe.

Preparation

  1. Melt chocolate chips in a double boiler or in the microwave. Make sure to let the chocolate melt slowly. Stir until chocolate is uniformly smooth.
  2. In a food processor, combine tofu, melted chocolate, warmed milk and vanilla. Process until smooth. Place tofu mixture in fine-mesh strainer or sieve, pushing through with the back of a wooden spoon, into a medium decorative serving bowl. Serve from the bowl or ladle into individual serving bowls. Chill and serve.

Make this recipe with white chocolate chips for a different spin on decadence.

    There are different types of tofu- soft, hard, extra hard, and silken. Silken is good in smoothies too because of it's soft, smooth texture. I've made this before and it's good.

    Silken tofu was easy to find. I made this last night, everyone loved. It could have used less chocolate, extremly sweet. I made it into 5 portions and topped with strawberries, the kids loved dipping the strawberries in the mouse. Over all it was great!!!

    I used 100% dark chocolate (basically baking chocolate) and skipped the vanilla. I really liked it like that! Smooth and just like a mousse. I will be making this again!

    I wonder if possible to get a lower fat version of this. I need to really think about this. Too much fat and carbs not good for my hypoglycemia. Someone suggested chocolate protein powder, hmmm.... This would give more protein and maybe do half of this and half of chocolate might work, will try and see what becomes of this. This in itself sounds awesome, just too much richness for me. I just read that someone used 100 percent chocolate and if that's what I'm thinking, that doesn't have loads of fat in it, right ? Ok, I'm on a mission to figure this out, maybe just chocolate soy protein powder with the tofu and then maybe shaving of chocolate on top. That would kind of trick my family into thinking it's in the inside too. May be on to something, will let you know how turns out, I'll make it next weekend after shopping for ingredients.

    KarenMarie7, I would love to hear if that worked for you! I made this and while it was to die for, I would appreciate a less dark chocolatey taste so I might get my little guy to like it and be happy with this as a sweet treat!

    I switched this up a bit. Used 1/2cup of cocoa and 1/4cup of sweetner. I used stevia in the raw ( cup for cup version)
