Spaghetti with Pesto Sauce

Spaghetti is a family favorite any day of the week, so share the love with your family by making this simple and delicious recipe from The Eat-Clean Diet® Cookbook!

Ingredients

• 1 lb / 454 g noodles (buckwheat or brown rice noodles)
• 3 quarts / 3 L water
• 1 tsp / 5 ml sea salt

Pesto Ingredients

• 3 cups / 720 ml fresh basil leaves
• ½ cup / 120 ml almonds, coarsely chopped
• ¾ cup / 180 ml parsley
• 2 cloves garlic, passed through a garlic press
• ¼ cup / 60 ml extra virgin olive oil
• Sea salt

 

Preparation

  1. Bring water to a rolling boil. Add sea salt. Cook noodles al dente. Rinse under cold water to prevent clumping when cooking is complete. Place cooked noodles in large sauté pan or saucepan. Set aside.
  2. Prepare pesto sauce by placing all ingredients in a food processor. Pulse until ingredients resemble a smooth paste. Scrape pesto out of food processor bowl and pour over cooked noodles. Over medium heat, toss noodles and pesto sauce until heated through. Serve hot.

    Hi, I'm new to Clean Eating and was wondering if this is the entire meal, or do you serve it with veggies and protein to make it a complete meal??? I saw that you can serve the tofu mousse with it, so how do I encorporate this into the meal? Take away from the protein and smaller portion of pasta? Thanks

    I think you would need to add more protein to make a complete meal, the almonds are not enough

    You could easily add a nice green salad with this with some olive oil and balsamic vinegar.

    My two kids ages 5 and 14 love this recipe! Sometimes we add grilled chicken, grilled shrimp, or even just halved cherry tomatoes. The pesto freezes well!

    I'm new to the site so please bear with me if that has been covered before. My girlfriend introduced me to the site and the recipe titles look great, however, on closer look there is a glaring problem that no-one has pointed out. How on earth do you measure 720ml of basil? For that matter how do you measure 180ml of parsley or 120ml of almonds. There is a perfectly good way of measuring non-liquid food stuffs...scales! Am I missing something? Measuring cups and jugs were made for liquids (though I can see how it is possible to measure fine grind food stuffs like flour and sugar), but using them for solid goods is ridiculous. Cooking shouldn't be hard and it shouldn't be complicated but using liquid measurement for solid goods does not build confidence in the author's cooking ability, recipe accuracy or desire for the novice cook to follow. /rant

    Delicious! I tossed this with homemade wheat-spinach pasta, a chopped Roma and the tiniest bit of Parmesan cheese. Yum!

    Yum! I made this last night. I added chicken breast pieces that I sauted in coconut oil and used wheat spinach pasta. THere was barely enough for my husband who came home late from work - kids kept going back for 2n and 3rds!!!

    Alawys add lan proteins to maximize the usage of energy from the calories and avoid storing ! Be a fat burbing machine, eat lean protein!!!

    Made this last night. Very flavourful and easy to prepare. Loved it! Definately one to add to my growing list of fab EC recipes.
