• 4 sections of parchment paper cut into 12 x 16-inch pieces • 2 cups / 480 ml arugula leaves, torn • 4 x 4-oz boneless, skinless chicken breast halves • 2 tsp / 10 ml fresh chopped sage, divided • 2 tsp /10 ml fresh chopped rosemary, divided • 1 cup /240 ml chopped plum tomatoes, divided • Sea salt, to taste • Freshly ground black pepper, divided • 4 tsp / 20 ml extra virgin olive oil • 4 tsp / 20 ml kalamata olives, sliced and pitted (optional) • Eat-Clean Cooking Spray

I made this with a few different ingredients and it was amazing!! Instead of Arugula, I used fresh baby spinach and I used a blend of spices because I did not have Rosemary...it was so juicy & delicious! I also made quinoa and used the juces to flavor it up...YUMMY!

I've never used parchment paper in a recipe before so I was a little nervous but this recipe turned out great! The chicken was super moist and juicy, definitely a keeper! I made it with brown rice and will probably go without the arugula next time around, as the leaves don't keep well as leftovers. I ended up picking them out after reheating the next day

This recipe technique was really great. I altered the seasoning selection by using a 21 spice blend and chipotle seasoning instead. I cut grape tomatoes on top and added fresh spinach. I was looking for a new way to cook a chicken dish, and I believe I have found it!

Wonderful and simple. My husband thought it could have had a little more flavor but I thought it was great! Very fresh tasting and certainly juicy. I halved grape tomatoes and omitted the olives because I didn't think the kids would like the olive flavor. I believe that the olives would have given it the finishing touch my husband was missing.

My family loved this recipe. I used onion powder, salt and pepper as my seasonings, put it over spinach instead and topped it with organic grape tomatoes and the olive oil. It was so juicy I couldn't believe it! I was really nervous about wrapping it incorrectly in the parchment paper, but it came out great! Maybe you should show step by step instructions for folding the parchment paper to the how to section on eatingcleanmag.com. :)
