Ingredients
• 8 firm yet ripe plum tomatoes, seeded and coarsely chopped • 3 Tbsp / 45 ml extra virgin olive oil • 1 yellow onion, chopped • 2 cups / 480 ml short-grain brown rice • 1 Tbsp / 15 ml chopped fresh thyme, plus extra for garnish • 4¼ cups / 1 L low-sodium chicken stock, heated • Sea salt and freshly ground black pepper, to taste

i followed the directions, except we tried a half a batch. My daughter asked for seconds and said she loved the tomatoes. She wants me to add more the next time! The flavor was light and fresh and went wonderfully with roasted chicken breast and green beans! We will definitely be adding this one to our list of clean sides!

I followed the directions,but added 3 cloves of fresh garlic--minced up and added with the onion when sauteed. This was a delicious and healthier side dish. We will be using again. This was even a hit with my super picky 2 year old. Thanks for sharing.
