Ingredients
• 4 boneless, skinless chicken breasts • 1 cup / 240 ml black beans • 1 cup / 240 ml corn kernels (fresh or frozen) • 1 small jar salsa (your favorite variety) • 1 Tbsp / 15 ml cumin • 1 Tbsp / 15 ml chili powder • 2 cups / 480 ml cooked brown rice

I plan on making this vegetarian but putting in cubes of extra firm tofu. Then I'll serve it over rice or quinoa. I love Mexican-y food so this sounds terrific!

I'm a vegetarion so I added Tofu in place of the chicken. It was equally as delicious and enough to last me an entire week with leftovers to freeze! Adding the Greek yogurt introduced an interesting creaminess and gave me a protein boost.

This is the first recipe tried on the Eat-Clean Diet and it was easy to make and tasty. I made wraps wth the leftovers adding lettuce, tomatoes and red onions. Yummy!

This is a great base that I encourage you to add to! I've made this dish 3 times, and the final recipe is the above recipe, made with 1 whole can of beans, sometimes black and pinto. I top each serving with 1/4 of an avacado cubed, 1/4 of a lime freshly squeezed, and 1/2 Tbs chopped cilantro.

I made this for my boyfriend and a I. WE LOVED IT! I bought black and white beans, and put all the ingredients in at the same time, raw unfrozen 5 chicken breasts and cooked it on high for 5 hours it was sooo good and cooked right through. I also added 1 cup water 1/2 way through just to make sure my dried beans rehydrated and were good. SO EASY TO MAKE!

Wow! I made this today..and loved it!! I put fresh avacado, scallions and diced tomatoes on top. YUM!!

I made this recipe today, my whole family loved it. I used organic canned pinto beans because thats what i had on hand, they held up great and tasted awesome. I put it over a big bowl of romaine lettuce added a little extra salsa and some avacado, so yummy! I would throw some jalapeno in next time to just to give it a kick.

I WOULD ALSO LIKE TO KNOW IF THE BEANS ARE SUPPOSED TO BE FROM A CAN OR RAW AND IF CHICKEN SHOULD BE PUT FROZEN OR THAWED IN THE SLOW COOKER!! I WANNA TRY THIS SO BAD BUT WANNA GET IT RIGHT

I use chicken that has been thawed. I have used thighs and legs as well as breasts. They all work well. I usually use canned bean medley with frozen corn niblets but I think that dry beans would work well too. Just go ahead and try it. It is a great starting recipe and can be modified as you like.
