• 3 good-sized sweet potatoes, scrubbed and trimmed of fibers • 1½ cups / 360 ml apple juice • 1/3 cup / 80 ml pure honey • 1 tsp / 5 ml ground nutmeg • 1 tsp / 5 ml ground cinnamon • 1 tsp / 5 ml freshly grated lemon zest • ½ tsp / 2.5 ml sea salt • 3 Tbsp / 45 ml extra virgin olive oil • Juice of ½ lemon
