I love love love this. I used plain yogurt instead of milk. I put the cottage cheese, yogurt and eggs in a food processor and then stirred everything else in. Used the no salt cottage cheese so it brought the sodium down a bit and by my calculations this is 2 servings.

I made this today for lunch, but I doubled it so I would have enough to feed the whole family. It was amazing!! I added some pepper to it and we ate it wrapped in whole wheat tortillas. It is a little runny though, so maybe use less milk.

I just made this but used a dry low fat cottage cheese with only 125 mg of salt per 1/4 cup so it brought the sodium way down. I also deleted the mustard and put it in a wrap with arugula (adds a peppery taste without the pepper) and pea shoots. It was delicious and filling! I will definitely make this again.

Is the calories with the bread or with out? 170 seems low with two pieces of bread.
Ahh.. I think the calorie count is for 1 cup of egg salad which is one serving. The bread is extra caloires.

This recipe ROCKS! You do not miss the mayo at all. I skipped the curry powder, and added a dash of rice vinegar, which gave it a nice mayo-like flavor. I bet you could use the cottage-cheese mixture for almost anything mayonaise-based, like maybe potato salad??

I made this yesterday and halved the ready mix to use as 2 servings. As soon as I made it, I ate the first serving - it was awesome. I refregirated the rest and the next day everything was in liquid because of the whey in the cottage cheese. Nonethless, it was delicious and best of all - it managed to keep me really balanced and my blood-sugar was as steady as can be (= no hunger pangs all day long).

I loved this recipe. I never would have known that there was no mayo in it if I hadn't made it myself. I added pepper as well. On the down side, I felt it was a bit time consuming for only two sandwiches. I would like to experiment to see If I can speed it up somehow. Any ideas?
Just got a call from my husband on his way home from work. He did not eat his egg-salad-sandwich because it was all soggy. Anyone have this problem when you've packed it in a lunch? It was properly refrigerated all day.

This is such a good recipe! It was one of my first Eat Clean meals and I was very impressed! I wanted to make it for lunch when my in-laws were visiting, but was vetoed because FIL doesn't like mustard (I totally could have skipped it, but whatever). This is wonderful! I found mine to be a bit too salty, so I will probably halve or leave out the sea salt next time. I'm guessing 1 cup is actually 2 servings as well. Even a half cup would not fit onto my slice of sprouted bread.

I felt like egg salad today...and I so i felt it would be a good opportunity to jump in and finally try this. I was actually very nervous I would not like it and would be wasting all that food, because I gave up regular mayo years ago and have been eating egg salad for years with Fat Free dressing and was used to that . Meanwhile...Yuck :-p FF mayo has corn syrup in it and all kinds of garbage! This Eat-Clean Egg Salad was SO good! I omitted the skim milk ...j just mashed the heck out of it. I didn't have the green onion ...but I added celery seed along with the celery, and the sea salt. I put it on 2 brown rice cakes (not exactly cooler 1, as I already had oats for B-fast but I am ok with that) and I topped it with mixed baby greens & avocado and I did not miss the regular or FF mayo at all. And it has even more protein than if you used mayo from the cottage cheese YAY! :-)

I made this and loved it. I will probably even make it and take it to work even though it gets a little watery. I didn't add the milk. Also I had it in a glass bowl. When it came time to eat it I didn't use bread. I put a portion in a bowl and I cut up some cherry tomatoes on top that I just picked from the garden. VERY yummy.

I loved this recipe- but, mine didn't stay very well... I wanted to make it in bulk to use it for 2-3 days. However, when I went to use it the next day it was much too runny to use. Any suggestions?.... or anyone else have this problem? Other than that, this was delicious!

For a non-dairy option, I whipped lite silken tofu in the magic bullet and added a little less than 1/4 cup. Because the silken tofu is a little runnier than cottage cheese I omitted the milk. Soooooo good! I have found the whipped silken tofu is an awesome sub for greek yogurt or cottage cheese in recipes. I tried it for the first time about a month ago and i loved it!

I can say was not a fan of cottage cheese, but this has changed my mind. It is easy to make and taste great. I don't eat thing that taste nasty, no mater how healthy it is for you! I added more curry (yum!) and added pepper. The serving is for 1/2 cup, not 1 cup, FYI. This is a new cooler staple!
And I only used two egg whites, one yolk. Seemed like plenty to me.
