This crustless quiche from The Eat-Clean Diet® Cookbook 2 is healthy, simple, filling and low in fat! To cut down the prep and cooking time on the morning of your brunch, prepare the filling ingredients the night before and spread them on the bottom of your quiche dish. The next morning, whisk the eggs with the milk and seasonings, then pour into the quiche dish and bake.
Ingredients
• Eat-Clean Cooking Spray • 1 tsp / 5 ml extra virgin olive oil • 1 onion, halved and thinly sliced • ¼ tsp / 1.25 ml dried Herbes de Provence • Pinch sea salt • Pinch freshly ground black pepper • 1 cup / 240 ml broccoli florets • 1 egg • 2 egg whites • 1 cup / 240 ml low-fat milk • 1/8 tsp / 0.625 ml freshly grated nutmeg • 2 Tbsp / 30 ml Danish or French blue cheese • Freshly ground black pepper, to taste

The McCormick spices website (http://www.mccormickgourmet.com/Products/Blends/Herbes-de-Provence.aspx) lists an "Herbes de Provence" blend (containing rosemary, marjoram, thyme, and savory) and Epicure Selections (http://www.epicureselections.com/en/products/food/global-pantry/1250/herbes-proven%C3%A7ales) lists an "Herbes Provençales" blend (basil, lavender and rosemary) Hope this helps a bit...

Something doesn't seem right with the amount of eggs in the ingredient list. How can 1 egg/2 whites be enough to make a quiche big enough for 8 servings?

I dont think this calorie count could possibly be correct. I am getting 183cals per serving according to the rest of that nutrition info. Still not bad, but 61 is way low.

Made this last night! I substituted the blue cheese for low-fat mozzarella laid in slices across the broccoli and added an extra egg white. I baked it in a regular casserole dish greased with Eat Clean cooking spray. Delicious and even yummier as left overs!!

I just tried out this recipe and I began caramelizing the onions before I realized that I did not have any broccoli. So, like with any good quiche I just added a cup of chopped veggies from among what I had in the fridge and it turned out fine. I was actually surprised by how tasty it is.
