Ingredients
• 3 x 6-oz / 170-g boneless, skinless chicken breasts • ¼ cup / 60 ml oat bran • ¼ cup / 60 ml wheat germ • 1 Tbsp / 15 ml coarsely ground flaxseed • ¼ cup / 60 ml coarsely ground almonds • ½ tsp / 2.5 ml sea salt • ½ tsp / 2.5 ml white pepper • Pinch garlic powder • ½ cup / 120 ml water or low-sodium chicken broth • 1 large egg white, lightly beaten
Preparation
• 1½ tsp / 7.5 ml honey • 1 Tbsp / 15 ml Dijon mustard

Yummy! Family loved it too! Super yummy . . . . my mouth is still watering . . . I am diabetic though so fixed the honey mustard for family and I ate with no sauce. I did find a suggestion elsewhere using no-sugar added apricot preserves instead of the honey to make the dipping sauce. Will try that next time. I'm pretty sure that still keeps it "clean".

I ABSOLUTLY love these bites!! BUT... I calculated the calories using myfooddiary.com- (fantastic nutrition tracking site that I use daily)- based on the recipe portions as provided, without the sauce- (which also tastes fantastic!!) My numbers came out like this for ONE nugget: 56 Calories, 1.6 grams Fat, 18 Cholesterol, 77 Sodium, 2.6 Carbs & 7.5 Protein. The only difference is that I could not find Oat Bran or Wheat Germ at my market, so I used Whole Wheat Flour- these are comprable in calories. That's twice the amounts of the calculations here??? Did I miss something??? GREAT RECIPE REGARDLESS!!

DELISH. I used a hot cereal mix from Whole Foods that blends oat bran, flax seed and wheat germ, which saved me time from measuring. I didn't have time to grind the almonds but did add some Italian Seasoning and a little extra garlic powder. 100% you must try this!

4-year old approved! These were FANTASTIC! I thought they'd be "healthy" tasting, but they were so good, even my 4-year old loved them. I let him help dip them in the coating and he enjoyed that too. I have now pre-made a mixture of the dried ingredients for the coating and keep it in a sealed jar so I can easily throw these together whenever I want!

I will not buy Chicken Nuggets for my granddaughter. I was thrilled to find this recipe. I made them with my five-year-old granddaughter and she loved them. I also like them cold with a salad. I just made this and wow they were amazing!! I had to cook them for 10 more minutes... but even so they were so tender and fresh! After this, I'm never going back to fried. Ate them with the honey 'deli' mustard (don't have dijon) with baked sweet potato, so delicious!! Saved a bit for tomorrow's lunch with veggies. yum!

I am excited to try this recipe especially after reading all the great comments. I LOVE chicken nuggets so I believe this recipe will help me have a healthy meal in chicken nuggets and I won't have to save nuggets for a "special" day!
I made the crispy chicken bites for dinner with a salad using the dressing recipe for the tangy pumpkin seed salad (it is referred to in the keep it tight tilapia recipe) and it was amazing! I love these chicken bites and will not crave chicken nuggets again! I did not have oat bran so I ground up half of a waasa cracker and it added a nice texture.

Well the chicken was a success. Instead of making nuggest I made flat chicken. Which is taking a chicken breast a nd pounding it with a rolling pin until thin. Followed the recipe here on out. Except the dip sauce....thought one change at a time. But my son who has difficulty eating meat (he may be my future vegetarian) ate the chicken no problem and my daughter who is really fussy ate them and said they were really good.

Great recipe! I didnt have oat bran (the line at whole foods surrounding the grains were ridiculous) so i threw whole almonds and oatmeal in the food processor. I also didnt have an egg so I used egg beaters which worked great. It didnt get the darker brown crispy crust as shown in the above picture, but i sure was crunchy and delish!

I had an oven fried chicken recipe using Panko crumbs that I adored. However, I tried this one and really like it. Instead of nuggets, I used 2 full-sized chicken breasts and baked at 400 for 45 minutes. I might try cooking a little longer next time to see if I can get it crisper. Other than that, the taste is great, and the 7 year old (and 47 year old) approved!

This recipe was excellent!!! Made them myself and some neighbourhood kids and they thought they were better than McDonalds! They were even good the next day cold right out of the fridge as one of my snacks that I paired with a pear:) Definitely try these! @bluevalentine....not sure where you live, but try The Bulk Barn or PC Blue Menu has it in any of their Loblaws stores (if you live in Canada)

This is the first (and defintely not the last) recipe I've tried from here. It was amazing. Ingredients were ones I had at my house or easily found in the store. Made these tonight for my family of 5 and everyone loved them. I used the egg and water for the kids bites, but I thought I'd try something a little different for my husband and I. I replaced water with Franks Redhot for a spicy version. I actually liked it better with just that hint of spice. Gonna have the leftovers tomorrow for lunch. Yum!

We made these, I soaked the chicken in a mixture of egg white and chicken stock before breading. The flavor was wonderful. These are also great reheated on a salad the next day! My daughter requests these now. :) My whole family is eating clean. We made "mashed potatoes" from the Eat Clean Diet Cook Book with these and this was pure comfort food! :)

Love these nuggets and my grandchildren love them as well. My problem is that I have not been able to make them crispy without overcooking the chicken. Does anyone have any suggestions. I have baked at a higher temp and still not satisfied, they are absolutely delicious, I would just like to get them crunchy.
A substitue for oat bran was corn meal. Makes it more crunchy and tastes great.
