Coconutty Almond Cookies

This recipe comes from community member Vanessa. Here’s what she had to say about it: “This is a very tasty wheat-free, gluten-free, low-carb recipe with good essential fatty acids and medium-chain triglycerides! It’s a nice treat for the figure or fitness competitor – I compete myself and my children enjoy them too!”

Ingredients

• 1 cup / 240 ml almond flour
• 1 cup / 240 ml coconut flour
• 2 Tbsp / 30 ml flaxseed
• 1 ¼ cups / 300 ml unsweetened coconut flakes
• 1 Tbsp / 15 ml ground cinnamon
• 1 Tbsp / 15 ml Sucanat or other unrefined sugar
• 4 tsp / 20 ml baking soda
• 1 large egg
• 2 egg whites
• ½ cup / 120 ml almond butter
• ¾ cup / 180 ml extra virgin coconut oil, melted
• 1 Tbsp / 15 ml real vanilla extract

Preparation

  1. Preheat oven to 375°F / 190°C. Place rack in top third of oven. Line a large cookie sheet with parchment paper.
  2. In a large bowl, combine all dry ingredients. In a separate bowl, combine eggs, almond butter, coconut oil and vanilla.
  3. Add wet ingredients to dry and mix well until combined. If the cookie dough is too dry, add water ¼ cup / 60 ml at a time and stir until well blended – do not drench the dough.
  4. Use a tablespoon measure to scoop dough, roll into a ball with your hands and then place on the cookie sheet. Press gently down with your fingers in a criss-cross pattern, but do not flatten the ball. Repeat with remaining dough.
  5. Bake in oven for 10-12 minutes. Remove to a cooling rack. Serve once cooled.

Note

These cookies are a great choice for an occasional treat on your Eat-Clean Diet plan. Full of healthy fats from coconut and almonds, these treats will satisfy your sweets cravings while helping fill your daily requirements of healthy fat and oils.

    I don't know how I managed to rate it with two hearts (above), as I did not mean to. I tried baking these cookies TWICE, seeing as how the first time was a total dud. The second time (with a reduction in the baking soda, and a slight increase in the sucanat and water) was not any better. My whole family found these cookies to have a very grainy/ dry texture and not much flavor at all. Too bad. I was looking forward to a yummy cookie recipe. Thanks anyway.

    The dough seemed very dry so I added a banana and they actually came out well except for being too salty. Going to try it again with only 2 tsp of baking soda.

    I made these for myself and co-workers, they turned out rather well. I think I will decrease the baking soda to 1-2 tsp though, and perhaps add some unsweetend apple sauce next time.

    Are you sure there should be 4 tsp of baking soda? I never heard of such an amount. I had to throw them out because all you could taste was the soda. Very expensive to have to waste all that money on the ingredients and then throw out.

    I thought this recipe sounded really good. I should have read the reviews first. The amount of baking soda RUINED the results. This recipe needs to be seriously reworked ! Until it is, sadly I recommend that you put this at the end of your list. I marked that I liked it by accident.
