Baked Cranberries and Apple


YIELD: 4 x ½ cup

Details

The inviting aroma of baked apple, cranberries, nutmeg and maple syrup will lure your family into the kitchen to devour this effortlessly delicious dessert from Tosca Reno’s Eat Clean Cookbook.

Ingredients

• 1 x 12-oz / 375 g bag of fresh cranberries, rinsed
• 1 large Mutsu or other firm apple, peeled, cored and chopped
• ½ cup / 120 ml pure maple syrup
• Peel of one orange, cut into ribbons
• Juice of ½ fresh orange
• 2 cinnamon sticks
• Pinch ground nutmeg

Preparation

  1. Preheat oven to 350ºF / 180ºC.
  2. Prepare a medium casserole dish by spraying with Eat-Clean Cooking Spray or a touch of olive oil.
  3. Combine all ingredients in a mixing bowl and toss until well mixed. Place in casserole dish and cover. Bake for 30 minutes.
  4. Remove lid and bake another 10 minutes or until the sauce turns to syrup and fruit is cooked.

    YUM! This is so similar to something my grandma used to make at Christmas, however she had some sweet pototoes in there too. So good and festive, thank you for the recipe and the memories! :-)

    What would be a good substitute for maple syrup? I've never been fond of the flavor of maple. Thanks!

    Molasses and whipped honey are good maple syrup substitutes.

    I made this today, but I stepped it up a notch. Add mashed sweet potatoes, a few chopped dates & a hand full or so of raisins before putting it in the oven. Serve warm with a gob of fresh, whipped cream. Hmm-Umm! Almost better than sex:)
