Autumn Beef Stew

Details

Embrace the chilly weather with this slow-cooker recipe that is sure to warm you from the inside out. This recipe comes from Kitchen Table community member Tiffany. Here’s her tip: Use extra veggies since they cook down and may not seem like enough. I doubled this recipe so it fit perfectly into my large Crock-Pot and made enough for leftovers!

Ingredients

• 1 lb / 454 g extra lean stewing beef, cut into 1-inch cubes
• ¼ lb / 113 g low-sodium turkey bacon
• 1 cup / 240 ml chopped onion
• 2 cups / 480 ml low-sodium beef broth
• 2 cups / 480 ml apple cider
• 1 lb / 454 g diced white potatoes
• 2 medium carrots, peeled and sliced
• 2 ribs celery, sliced
• 1½ cups / 360 ml diced rutabaga
• 1 bay leaf
• ½ tsp / 2.5 ml dried rosemary, crumbled
• ½ tsp / 2.5 ml freshly ground black pepper
• 1 Tbsp / 15 ml freshly chopped parsley or dried parsley flakes (optional)
• 2 Tbsp / 30 ml whole wheat flour

Preparation

  1. Cook beef, turkey bacon and onions in a large skillet on medium heat until the beef is browned and bacon is cooked.
  2. Place in the slow cooker: beef, bacon, onions, broth, apple cider, potatoes, carrots, celery, rutabaga, bay leaf, rosemary, pepper and parsley, if using. Cover and cook 7-9 hours.
  3. Combine flour with 2 Tbsp / 30 ml cold water to form a smooth mixture. Stir into mixture in slow cooker and continue cooking for another 15 minutes. Serve.

    I am confused.... I am new to the eating clean community. I am on day one and looking at recipes.....I thought we were to stay away from white potatoes.

    I wasthinking the same thing! I think when it's combined with a lean protein it's ok? Can someone elaborate a little?

    I'm not sure about the rules because I am also new to eating clean. I plan use 1/2 a potato for the thickening power and double the other veggies. I also plan to add more veggies like summer squash and zuccini. I will probably omit the turkey bacon too.

    I made this last weekend and left out the turkey bacon. I'm new to eating clean as well and am trying to figure it all out - Day 10 and loving it! This recipe was delicious and the leftovers were even better. The only problem I had was that I wasn't able to thicken the broth. The flour clumped even though I mixed with cold water before adding it to the stew. Is there a trick to this?

    Potatoes are eating clean.... its anything in its natural state or less than 5 ingredients. In my mind, if it has more than 1 ingredient I dont eat it, unless I take several clean items and make a dish from those. The key part is eating the lean protein with it. I hope this helps.

    I used this as a jumping off point for a somewhat different beef stew that is gluten free and has sweet potatoes instead of white potatoes. It is still in the crockpot so I'll have to get back to you on how successful it turns out.

    Hi, For those saying their stew didn't thicken, I suggest coating your beef in a mix of flour, pepper, salt, herbs and then putting this in the stew like this for cooking. This way, the flour has the whole cooking time to activate and thicken your gravy. Also, the use of some potatoes is a good natural thickener too. Also, don't add too much water or stock, as remember that a lot of vegies will contribute water content too. I always add tomatoes to my stew, and these add a lot of liquid as they break down and cook.

    I've been looking forward to my mother's beef stew, but I think I'll make my own the clean way!! About the potatoes, I just learned that potatoes are a type of "resistant starch" that is a type of carb not digested by the body. It fills you up and helps you burn calories from the fat you eat and store!! If we're not digesting it...its going in, filling us up and going out. Sounds good to me!

    looks interesting. Think my usual recipe for stew might be easier, so I'll probably stick with it. Basically I brown stew beef with onions and add it to a crockpot with potatoes, carrots, celery, a can of green beans, and a can of whole peeled tomatoes and cook it for 6 hours or so on low. My Mom does it in her pressure cooker. I am new to eating clean, so I make have violated a few rules, like using flour and water to thicken my stew, but it mostly veggies with a lean protein, so I think I'm good.

    Silly question I'm sure. The 2 cups of Apple Cider, is that Cider the drink (i.e. strongbow alcohol cider) or Apple Cider Vinegar?
