Not sure what to make for dinner tonight? Try this quick and easy meal from The Eat-Clean Diet® Recharged! The great thing about this dish is you can substitute whatever veggies you have on hand. It makes delicious leftovers!
Ingredients
• 2 large boneless, skinless chicken breasts, sliced into ¼-inch strips • 2 Tbsp / 30 ml low-sodium soy sauce • 1 tsp / 5 ml fresh ginger, minced • 1 clove garlic, passed through a garlic press • 2 Tbsp / 30 ml rice wine vinegar • 2 Tbsp / 30 ml toasted sesame oil • 4 cups / 960 ml low-sodium chicken or vegetable broth • 1 package / 8 oz dry soba noodles or Asian noodles • ½ cup / 120 ml frozen peas • 2 cups / 480 ml broccoli spears • ¼ cup / 60 ml thinly sliced sweet red pepper • 1 small carrot, peeled and grated • 4 green onions, thinly sliced on the diagonal • 4 generous handfuls spinach • ¼ cup / 60 ml unsalted roasted peanuts, chopped (optional)

This was awesome. I overcooked it a little but it was still great. My husband who is a little hesitant with "healthy" recipes, LOVED it. I can't wait to try the Bison burgers. My kids really like hamburgers but I hate all the fat and the recipe for the burgers sounds really delicious. Thanks

This recipe might be quick and easy, but the sodium content is out of control. You might as well get take out. Nothing is healthy that contains over 900 mgs of sodium per serving.

This was delicious! I didn't add the noodles. So - I changed the name to Asian bowl without noodles! :) I added Bok choy - great taste and also added shrimp. The family loved it!

As far as the sodium goes, I have found a broth that IS truly lower in sodium. The only one I have found in the grocery store is Campbells--and it is only 25% less sodium. I have recently purchased a powdered chicken stock from Epicure--you know, the home parties? It smells and tastes delicious--like real chicken soup! And it has around 130mg per serving, as opposed to the 600-900 mg you find in other brands! Their products are pretty clean too.

I think this recipe is awesome! There are so many variations. You can replace chicken with shrimp. If you can find some "clean" Udon noodles, those are delish in this also. Mix up the vegatables, etc...

I made this for dinner last night, and it turned out great! I would like to make it again, with beef and mushrooms! Yummy! The only difficult thing about this recipe is trying to find a good "clean" store-bought broth. I don't have the time to be making my own and freezing it.

I made this last week. It was easy and the taste was excellent. I thought it would reheat better if the noodles weren't in it, though. It was pretty starchy and tended to get very thick when refrigerated and reheated. Still tasted great, though!

For those of you having a hard time finding Soba noodles, I have found whole wheat Soba noodles at my local Marc's stores on occasion. When I find them, I stock up! Just a helpful hint I wanted to share with everyone.

For anyone worried bout the sodium content: You can easily make your own chicken broth (using leftover baked chicken bones and veggies), without added salt. It's easy and it freezes well in medium Ziploc containers for future uses.
