Strawberry-
Banana Baked Betty

Make this delicious dessert for a special person in your life. This classic favorite has been converted to an Eat-Clean treat! Enjoy!

Ingredients for Batter

• ¼ cup / 60 ml whole wheat flour
• 1/3 cup / 80 ml oat flour*
• ½ tsp / 2.5 ml baking powder
• 4 Tbsp / 60 ml Sucanat, divided
• ¼ tsp / 1.25 ml sea salt
• ¼ cup / 60 ml plain, fat-free yogurt
• 1 Tbsp / 15 ml melted Do-It-Yourself Olive Butter Spread (see Savory Ezekiel Bread Stuffing)
• 2 egg whites
• ¼ cup / 60 ml mashed bananas
• 2 1/3 cups / 550 ml thinly sliced strawberries
Eat-Clean Cooking spray

* You can make your own oat flour by placing 1/3 cup oats in a food processor and blending into a fine pulp

Ingredients for Whipped Topping

• 1 cup / 240 ml yogurt cheese
• 1 tsp / 5 ml vanilla
• 1 tsp / 5ml cinnamon

Preparation

  1. Preheat oven to 350°F / 177°C. Spray six ramekins with cooking spray and place them on a baking sheet. Set aside.
  2. Mix flours, baking powder, 1 Tbsp / 15 ml Sucanat and sea salt in a small bowl.
  3. Combine yogurt, melted olive butter spread, egg whites and mashed bananas in a medium bowl.
  4. Pour the dry ingredients over the wet ingredients and gently mix until you have a uniform mixture resembling cake batter. Set aside.
  5. In a small bowl mix the strawberries and the remaining 3 Tbsp / 45 ml Sucanat together.
  6. Scoop 1/3 cup / 80 ml strawberries into each ramekin. Spoon 2 Tbsp / 30 ml batter over the berries.
  7. Bake for 20-25 minutes until cake is golden brown and springy to the touch. Set on a baking rack to cool.
  8. In a mixing bowl beat yogurt cheese, vanilla and cinnamon until fluffy.
  9. Spoon 1 Tbsp / 15 ml whipped topping on top of each individual cake and serve.

    I made this for a birthday treat for my husband and our family. I substituted Kamut flour for the whole wheat flour and it turned out great! Even my son was impressed - he said it was really good considering it was "healthy". We would make it again!

    i used applesauce instead of banana once and 1/2 prune puree w/ 1/2 pumpkin another time - yummmm

    I accidentally forgot to mix the remaining 3 T. Sucanat with the strawberries and it still turned out yummy! It helps you get over a sweet craving while still being 'clean'!
