Jerk-Spiced Tilapia with Asparagus and Rice Pilaf

Details

Get the taste of summer with Tosca's homemade jerk spice! The mix of spices in combination with tilapia will have you begging for more!

Ingredients

• 1 tsp / 5 ml thyme
• 1 tsp / 5 ml chili powder
• 2 cloves of garlic, pressed
• 1 tsp / 5 ml ground ginger
• 1/2 tsp / 2 1/2 ml nutmeg
• 1/2 tsp / 2 1/2 ml cinnamon
• 1 jalapeno pepper, cored, seeded, and finely chopped
• 1 tsp / 5 ml freshly ground black pepper
• Pinch of sea salt
• 1 Tbsp / 15 ml lime juice
• 2 Tbsp / 30 ml olive oil
• 1/2 tsp / 2 1/2 ml ground cloves
• 4 tilapia fillets

Preparation

  1. Combine herbs and spices in a small bowl and mix well.
  2. Coat tilapia fillets with olive oil. Pat both sides with spices.
  3. Sauté each fillet until just cooked through, about 3 minutes on each side. Do not overcook!

Tip

Serve this dish with Brown Rice Pilaf (on pg. 103 The Eat-Clean Diet Cookbook) steamed asparagus.

    I was a little overwhelmed by all the spices I needed for this dish. But once I got past that, it was easy. It turned out great and my dinner date loved it.

    I made this fish on a whim, trying to find something new to make. It was so fast and easy, thanks to some left over sides in the fridge. But the best part was how good it was. The kids loved it, even my husband who wanted to fry the fish conceded that grilled fish can be good ;)

    Mine didn't look nearly as beautiful as the picture above, but this recipe is Delish!! I actually had it for breakfast this morning with left over quinoa in place of the rice. Such a great flavor with the mixture of seasonings. I will be eating this as much as possible since chicken gets way too boring too fast for me, lol.

    Not sure that I made it correctly. I mixed up the spices and then put the lime juice in with the spices. I think that was a mistake, since the spices didn't taste like much when put on the fish. Will try it again some other time. It did sound good. By putting the lime juice in with the spices, the spices ended up clumping. I assume that it was a mistake. Plus, the lime juice probably neutralized some of the spice taste.

    i've made jerk with several recipes, including this one. I don't think it is for me I didn't like it.
