Tosca's Cooler (pg 43)

  • 2 Apples
  • 2 cups / 480 ml of Salad Greens
  • 3 oz Salmon Nicoise with Lemon Juice
  • 1 cup / 240 ml Mixed Pepper Rounds
  • 1 cup / 240 ml Cherry Tomatoes
  • 2 Ryvita Slices
  • 1 cup / 240 ml Hummus
  • 1 carton of Unsweetened Almond Milk

This is too much food to consume in one day, but I usually place them in my cooler to have them on hand. It’s nice to have some staples already in the cooler to make packing it easier.
