(Thursday, March 8th, 2012) Day 67: The 4th Annual Eat Clean Diet Makeover Challenge

Hey there,

It's almost 9pm here in San Diego... It's been a very, very, very long day.  Spent the entire day at the ER with my daughter and granddaughter.  My Granddaughter broke her arm at school today =(   she fractured her elbow on the playground, and was in excrutiating pain.  As you can imagine, the ER was jam packed with sick people... mainly upper respiratory infections, cold/flu symptoms, pneumonia (been there, done that!).  We had quite a long waite.

Thank goodness I always keep a packed cooler in my fridge full of clean and healthy snacks.  I keep things in it like bottled water, hard boiled eggs, string cheese, apples and oranges, nuts, fresh cut veggies, hummus, and small containers of plain Greek yogurt, a spoon, a fork, and napkins.  I also keep a couple of Lara Bars stashed in the side zippers.... just in case.

I got the call from my granddaughters school to come and pick her up and take her to the ER.  The first thing I did was call my daughter at work to let her know (She is doing her externship right now at a Medical practice, and she is not allowed to carry her cell phone with her), and then I grabbed my Eat Clean Cooler, my purse, and my Kindle.  =)

I've never had an emergency like that since I've been eating clean, so this was the first time I actually realized that, WOW, I had a cooler full of clean foods that I prepared.... because I like to have it there for convenience throughout the day.... so I can stay on track, and not have to "think" about what I want for a snack.   It was deffinately neat and convenient to be able to just grab a cooler out of the fridge to tote off to the ER!!!!  It felt awesome to know that in case of emergency, I am prepared!  I can just grab my cooler and go.  I did remember to grab a few ice packs out of the freezer, too.  My eat clean cooler saved the day!

It came in very handy... none of us had eaten lunch yet, and we had a bunch of healthy snacks to pick from as well as our own bottled water.  I did end up having to purchase more bottled water out of the machine, but that was fine.   The important thing was that we were able to keep healthy snacks in our bodies and not feel like we were starving, and we did not have to resort to junk food from a vending machine.

My granddaughter said that I was "magical" for bringing all of that food.... and my daughter said, "Man, there is really something to your clean eating madness, Mom!"  Lol... yes, there is "something" to it... it's not just for fun. I hope that my daughter remembers today, and starts to pack coolers of healthy snacks for her and my granddaughter.  That would make me so happy!

Understandably, I got absolutely nothing done today... but that is OKAY!!!!  I'm still a warrior!  I needed to be there for my granddaughter and my daughter, and I put aside all of my plans for today.  I did get some reading done on my Kindle at the hospital, though.  That was nice!  Well, here's hoping to a better day tomorrow... no injuries! Lol!  And please keep my granddaughter in your prayers for a speedy recovery, my KT friends!  She is in alot of pain tonight, and I hope she is able to get comfortable soon.  I love my granddaughter... I hate to see her in pain.  I'm just glad I could help out, sitting with her in the ER, and providing her with clean and healthy foods for the afternoon and evening.

So ladies, keep your coolers packed!  You never know when it might save YOUR day!  =)

Thanks Brenda! Well, you know how us recovering binge eaters can be... always thinking about food! Lol! The world can be comming to an end, and I will promise you, that first flash that goes thru my mind would be, "I need to eat something before I die!" =)

  • There was a time...

Good evening KT-ers! There was a time when I would read a friend's post about an epic night in town, I would think: I know, I was there! There was a time when I would read a friend's post about an epic night in town, I would think: I'm missing out, I better get there! There was a time when I would read a friend's post about an epic night in town, I would think: Oh man, I wish I could be there. There was a time when I would read a friend's post about an epic night in town, I would think: Yeah, I used to be there... But now when I read a friend's post about an epic night in town, I just think: I really don't care! So when I finished work very late tonight (2.30 am) and I had to text my friend's sister I wasn't going to make the hen party, I didn't feel guilty. I'm sorry I couldn't make it, but I think she will have a great time without me too. I'm not about to go home after a 13 hours shift, shower and get a taxi to the next town, trying to find them in one of the many, many bars in Magaluf (for those in the know; NOT the best place to go...) and playing catch up with a bunch of by now very drunk women. Or, drive to the next town and stay sober because I NEVER drink and drive, trying to get to the same level as they are, sober. Both options do not sound very appealing to me. Though I'm sorry I wasn't able to be there earlier, I don't feel guilty I decided it was best for ME to stay home now. I'd rather be there for her at her wedding day, and make it a lasting memory for the both of us. So, I've finished prepping my meals for tomorrow, and I'm off to bed. Friday is gym day, but I'm a bit tired after my 13 hours shift, so might have an extra rest day and go Saturday. For now, I say good night!

  • Experimentation!

Ok Kt'rs. Here is another of my experimental meals. Tofu jalapeno stuffed mini peppers! With spicy brown clean rice of course. I guess you can say it is sort of my version of a jalapeno popper. I am happy to report that, it actually came out tasting so close to cream cheese filling. I am very excited. Another item to add permanently to my menu!

I just want feel good about myself without having to starve or sirvive eating nothing but carrots and water lol. I want to change for good I want a life change and never going back ! ps. • A much needed break from chores

As I glance at the clock, I notice I have been sitting here for an hour reading through the postings..  I just finished cleaning.  You know the dreaded vac and steam cleaning the floors, laundry, cleaning kitty litter boxes and doing the dishes, etc.   Have to shower, finish laundry and should do grocery shopping to equip the camper for our first camping trip this weekend.    I realize that I am not going to stress about the hour.  During that time I was reconnected with my healthy eating lifestyle, found encouraging words to push me through the day, realized I am not the only one who struggles with things and was thankful for all on KT and for Tosca Reno.  It put me in a better mood, didnt feel as lonley, made me reasses my current stresses and I got a good chuckle from last post.  Put me in perspective of my accomplishments and made me realize things do not happen over night.  So...thank you all for a great one hour of my day.  Oh, forgot one more thing, it made me look at the rainy day as a necessity for our earth rather than just a pain in the butt for me because I cannot mow the lawn today or plant my potatoes before we head out for a  long weekend.   That takes me back to Kelli's message...some things cannot be perfected.  I certainly cannot control the rain...but maybe I can tarp our property so the rain stops and I can get the grass perfectly mowed...can anyone hook me up with a  tarp that will cover the estimated eight plus acres I mow ????   Two words,  UNCONTROLLABLE SITUATION.  P.S.  don't think I am not kicking myself for not mowing the entire lawn the other day.  Enjoy your day.   Know you made a difference in a persons life...mine !
