Eat Clean Soul Food Red Beans!!!

The following recipe is a my version of a "healthy, eat clean" soul food dish. Usually, something like salt port or bacon would be added to the beans. But, do to health reasons, I found using smoked turkey drumsticks (really low cost right about now before we go into the holidays) is an excellent alternative that will add flavor minus a whole lot of salt.

Ingredients

  • 2 c red beans
  • 1 or 2 smoked turkey drumstick(s)
  • 2 cloves of garlic
  • 1 large yellow onion
  • 5 sprigs of parsley
  • 3 celery stalks
  • 1 green onion
  • 3 collard green leaves

Instructions

I soak the beans overnight in a large bowl. The next day, I rinse the beans in a colander and picked through them (nothing worse than dirty and ugly beans).

I put two quarts of hot water on the stove and let it boil and then I add the beans to the pot and cook the beans on the stove for two hours.

After hours, I remove the beans from the stove and then rinse the beans again in a colander with cool water. I then cut up my veggies (garlic, yellow onion, parsley, celery, green onion, 1 jalapeno or 1 serrano and threw in three leaves of collard greens). I put the veggies on the bottom of the crock pot, the smoked turkey drumsticks on top of the veggies, and then put the beans on top of the veggies, take a large cooking spoon and stir things around, add some seasoning (not to much because I do not want to over salt the beans so about one shake of my creole seasoning), add 1 can of chicken broth, and finally five cups of water. The first two hours, I cook the beans on high on my crock pot and check to makes sure that plenty of water is on top of the beans. After two hours, I check the water level again and then switch the crock pot setting to low.

Cook yourself up some brown rice and add your beans and you are good to go!!!

Yield: I can usually freeze 2 medium bowls of the beans and have on the fridge
Preparation Time: About 30 Minutes
Cooking Time: Give or take about 6 hours (If your beans are soft, you are good to go)
