Sweet Potato Chips

My favourite new way to eat sweet potatos! Delicious, crunchy, great during the summer with a clean turkey burger.

Ingredients

  • sweet potato
  • olive oil

Instructions

Slice your sweet potatoes thin, carefully, with a sharp knife.

Spread them out on a baking sheet and brush lightly with olive oil. Sprinkle with sea salt (I also like to add a little salt-free cajun seasoning). Try not to let them overlap too much, or they won't crisp evenly.

Bake, flipping once, at 400 degrees until centers are soft and edges are crisp... about 20-30 minutes, depending on how thin your slices are.

They're great fresh, but just as good at room temperature in a ziplock bag in your lunch the next day!

Preparation Time: 5-10 minutes
Cooking Time: 20-30 minutes

    MissMelissa, You can also go a little bit better by using a food dehydrator to do these chips in!!! That way you don't have any oil in the recipe! But they sure are yummie!!!

    I have done this also, but I sprinkle cinnamon...if I want somthing sweet....or cayenne pepper, if I want somthing spicy! YUM!

    I tried these last night...some with salt, some with cinnamon, and they were GREAT!!! Question though.....I'm still pretty new, so I'm wondering...is salt encouraged on the Eat Clean Diet???

    To emmylou_08 -Sea Salt is part of eating clean.It is a healthier alternative to regular table salt.

    I eat this all the time. I sprinkle cinnamon on mine though. Also I bought one of those slicers that comes with different size inserts so you can cut them as thin as you want with no problem at all! I even julieanne them and make them like fries!! yummy!!!
