Clean Eating Cajun Jambalaya

A delicious all in one recipe filled with flavorful, clean ingredients. Easy to make, with simple clean up due to the foil package. Who doesn't love that! Make sure the rice is all natural ex. Uncle Ben's Fast and Natural Whole Grain Instant Brown Rice works well. This is rice that is precooked with no preservatives, additives or fillers. Whole grain in less time- but make sure it's whole grain to keep the recipe clean!

Ingredients

  • 1/2 pound raw shrimp/prawns (peeled, tail on)
  • 4 oz boneless, skinless chicken breast, diced
  • 1/2 medium onion, diced
  • 1 medium pepper, chopped
  • 1 rib celery, chopped
  • 1 1/2 medium tomatoes diced
  • 2 cloves minced garlic
  • 1 1/2 Tbsp salt-free cajun seasoning
  • 1 cup all natural instant brown rice
  • 1/2 cup low sodium chicken broth
  • sea salt, black pepper to taste
  • olive oil cooking spray

Instructions

Pre heat oven to 400F
Combine and toss all ingredients except cooking spray in a large bowl.
Prepare two pouches out of tin foil. Spray the pouches with the spray to prevent sticking.
Divide the mixture evenly into the two pouches.
Place the pouches on a baking tray and cook for 25 minutes or until proteins are fully cooked.
Carefully open pouch and serve! Be careful of the steam. Enjoy your meal and the easy clean up!

    Yes, I hope you like it! Easy to make and very tasty. It made 2 full servings (one for myself and one for my husband, and I did have a small serving leftover which I had the next day for a snack).

    this was my summer stand-by and now I add lots of other veggies for variety. This recipe is for 4 or at least the original one in the magazine was. I love the cajun seasoning on my chicken and even fish....I made a bigger version of the seasoning and keep it in a mason jar. Yum!
