Cashew Chip Cookies

Ingredients

Instructions

Fit Ingredients

3/4c (192g) cashew butter
2/3c (60g) vanilla protein powder
1 tbs (13g) ground flax
1 large egg
1 tsp pure vanilla extract
2tbs coconut milk
1/8c (14g) raw cacao nibs (or more if you like lots!) (can sub with mini chocolate chips)
2 tsp stevia (add more if you like your desserts really sweet)

non stick spray

Directions

Pre heat your oven to 350 degrees. Line your baking sheet with parchment paper and then spray with non stick spray. In a bowl, mix your protein powder, flax and stevia. In a second bowl mix your cashew butter, egg, vanilla and coconut milk. Add your dry ingredients into your wet. Mix well. This might take some arm power, so use those guns and mix, mix, mix until well combined! Stir in your cacao nibs. Using a tablespoon (or mini cookie scoop) divide the dough into 8 balls. Press the tops with a fork. Bake for 12 minutes.

    I think I will try this with chopped cashews instead of cocoa. Yum! And it's gluten free!

    This recipe is inspired by Tosca's "Seed Bowls". As I'm attempting to limit (not eliminate, hence the oats) my grains I've replaced my morning bowl of oatmeal with this yummy & crunchy mix. My thought is that instead of an entire bowl of oats, this way I'm just getting a little & it's balanced out with all the seeds. I eat it with berries & unsweetened vanilla almond milk, it's very satisfying & fuels me for my morning workouts :). If you are Paleo or grain-free just leave out the oats all-together.
