Blueberry Banana Oatmeal Muffins

My whole family loves these super easy to make muffins. Great for a breakfast on the go.

Ingredients

  • 3 large bananas, mashed
  • 2 cups frozen blueberries, still frozen
  • 1 C unsweetened coconut milk (or skim)
  • 1/4 C Stevia in the Raw (or sweetener of your choice)
  • 2 eggs
  • 1 Tbl baking powder
  • 3 C quick oats (I've used old fashioned in the past and they work great too)

Instructions

Preheat oven to 400 degrees. Mix bananas, blueberries, milk, stevia, eggs and baking powder. Once it is well mixed add the oats and mix again. Let it sit for about 5 minutes and spoon into a 12 cup muffin pan that has been sprayed with cooking spray of your choice. Fill each cup to its brim. Bake for 20 to 25 minutes.

Yield: 12 muffins
Preparation Time: 5 minutes
Cooking Time: 20-25 minutes

    looks soo good!!....do you think it would be ok to omit the sweetener because i tend to do that a lot with recipes that contain bananas since they normally make it sweet enough for me or do you think that might mess with the texture or anything??

    You know I've never taken out the sweetener, but I think it might be okay because of the banana. If you wanted to use agave I think that would work too.

    Made them over the weekend and love them. I froze the leftovers for when I'm in a hurry. I used liquid stevia for a sweetner.

    I am making these muffins this morning as an Easter treat. I'm craving something sweet but want to avoid the Easter candy! I went half blueberries and half strawberries. Also added some ground flax and vanilla extract. Agave Nectar for the sweetener. I'm excited to see how they turn out!

    im just baking these now to try them out with one cup of mixed berries and one cup of blueberries and i dont have stevia so i used one teaspoon of vanilla extract. (think thats clean) can i add protein powder on the next batch ? do you think that would work? if so i will bake it in a tin and turn them into bars and freeze them so they last the week.

    Great recipe thanks! Think I might need to leave them in the oven for a tad longer next time - prob 30 mins would do it. Found they were not as firm as I wanted. I did leave out the sweetener and they still tasted great! Going to experiment with this recipe base for sure! Thanks again! :)
