I don't have time every morning to cook my eggs, oatmeal, etc. so I pop these babies in the microwave for 40 seconds and I'm out the door, with a clean and nutritional breakfast. All ingredients can be altered with little or no effect on the structure of the pancake :)
They're not only delicious, but can be altered to your liking!

I am always looking for ways to spice up my in between snacks. This is one of my favorite and easiest recipes especially during the summer when jersey tomatoes are so fresh and loaded with tons of juicy flavor!!

This recipe has been printed in Oxygen magazine a few times and I absolutely love it. I switch up the fruit I add, depending on the season. A couple of days ago I made it with fresh peaches and blueberries. I love that it has cinnamon - great for regulating insulin. It makes a ton so even though the recipe says 2 servings I split it into 3. Perfect for those busy weeks when you just need to wake up and have breakfast waiting for you.

Tonight for supper i made haddock and asparagus. I knew my boyfriend would want something with his haddock since he doesn't love fish in the first place, but i didnt have the heart to make a tartar sauce made with yucky old mayo. Soooo, i came up with this and to tell you the truth, i just loved it!

I love biscotti but was afraid that they were too difficult to make. I gave Tosca's recipe a try this afternoon, and made some small adjustments and WOW! They are just fantastic, easy to make and the low fat treat I occasionally need. Plus, this was my practice run for making them for everyone for Christmas! (If you haven't had biscotti before, be warned that they are not really sweet!)

This recipe is from this month's Oxygen magazine. They have worked out the math and figured it is 51 cents per serving.
I have put my small modifications that I made to the recipe in brackets. Enjoy!

Mr. loves to fish and dive and we're spoiled by the abundance of different types of island fish here in Hawaii. I've used this recipe with all types of fish - would work great with halibut, too. It's no muss, no fuss and very easy to make.
This a great way to get healthy fats, lean protein and leafy greens in the same meal. Be sure to use low-sodium soy sauce!
