Oatmeal Pancakes


YIELD: 12 small pancakes
PREPARATION TIME: 5 minutes
COOKING TIME: 20 minutes


Details

When your everyday oatmeal breakfast becomes boring, mix it up with these excellent pancakes! They are packed with the nutrition of a bowl of Eat-Clean oatmeal and more!

Ingredients

• 2 1/2 cups / 600 ml dry rolled oats
• 6 egg whites
• 1 cup / 240 ml milk of your choice
• 1 Tbsp / 15 ml ground flaxseed
• 1 Tbsp / 15 ml safflower oil
• 1 tsp / 5 ml baking powder
• 1 tsp / 5ml vanilla
• 1 tsp / 5ml cinnamon
• Cooking spray

Preparation

  1. Place all ingredients in a blender or food processor. Blend the mixture for 20 seconds. The resulting mixture should be smooth. Spray a griddle or skillet with cooking spray. Heat over medium heat. Pour 1/4 cup of pancake mixture on the hot surface. Cook until the panckes are dry and bubbly on the edges. Bubbles should appear on top, as well. Turn and brown the other side.
  2. Try using unsweetened applesauce, or mixed fruit to top your pancakes as an alternative to maple syrup.

    Does it say somewhere how many pancakes are in a serving? I see that the yield is 12... but is a serving 2? 3?

    These pancakes are delicious and a great weekend-morning treat! It's originally from The Eat-Clean Diet Cookbook and in it it says that 2 pancakes is a serving. Hope that helps!

    i just made these pancakes, and they are DEEELISH!! i put unsweetened applesauce on top and garnished with mixed berries..amazing:) i noticed some of you asking about saving the extra and freezing..i'm gonna try it, and then i'll let you all know how it works out!

    Maybe I made it incorrectly. The ingredients got stuck in my blender because it was too dry, and the egg white's didn't blend with the ingredients properly. I didn't have a great experience with this pancake.

    Just made these for the first time tonight. They are wonderful! I substituted the vanilla flavor for butter-nut flavor, and added about 5 almonds to the mix before blending. It smelled delicious in the blender and tasted just as good when done! My husband absolutely loved them. We will be making some of these on Sunday nights and putting them in ziploc bags in the fridge for a quick grab-and-go breakfast! I'm sure these will be our new favorite breakfast and snack. <3

    Love this recipe! Delicious! Except I had to add a half cup of water. Batter was way too thick. Gonna freeze some and throw them in the toaster for a quick breakfast.

    I just cooked them and they are amazing!!! So fun to prepare and delicious to eat! I subbed the vanilla with 1/4 cup pecans and they were so so good.
