Chili Chicken Kebabs


YIELD: 4 kebabs

Kebabs are the perfect dinner for a hot summer’s night! Try this simple, quick and delicious recipe from The Eat-Clean Diet® for Men!

Ingredients

• 3 Tbsp / 45 ml extra virgin olive oil
• 1½ Tbsp / 22.5 ml balsamic vinegar
• Juice of one lime
• 1 tsp / 5 ml chili powder
• ½ tsp / 2.5 ml paprika
• 1 tsp / 5 ml cayenne pepper
• Sea salt and freshly ground black pepper, to taste
• 2 garlic cloves, pressed or minced
• 1 lb / 454 g boneless skinless chicken breast*, cut into 1½ inch / 4-cm pieces
• 1 large onion, chopped into thick pieces

*NOTE: Use pork, beef or bison tenderloin or turkey as alternative kebab meats. A sturdy, meaty fish such as salmon works well here, too.

Preparation

  1. In a small bowl whisk together olive oil, vinegar and lime juice. Season with chili powder, paprika, cayenne pepper, salt, pepper and pressed garlic.
  2. Place the chicken in a shallow baking dish with the sauce and stir to coat.
  3. Preheat the grill to medium high. Thread the chicken onto the skewers, alternating with chopped onion pieces. Discard the marinade.
  4. Lightly oil the grill grate. Grill the skewers for 10 to 15 minutes or until the chicken juices run clear.

Tosca's Tip

Group foods with similar cooking times and cut meats, veggies or fruit into a uniform size: 1½ inches / 4 cm works well.

    I made it with chicken breast, cut everything in half to make 2 servings. Also added zucchini on the skewers. Perfect summer meal and NO clean up!

    We made these and loved them! Added zucchini and green peppers. The seasoning is sooooo good that your imagination can go wild on the kabob ingredients. We are making them tonight with veggies only.

    LOVED IT!!! I added mushrooms and grape tomatoes....I'm going to try it again with pork and mango and possibly pineapple...and yes, while chili and pinapple seems to be an odd combo...it is delicious

    Tasted good. I marinated and skillet cooked (it was too hot to grill!). Served it with brown rice and mixed veggies. Next time might try making a peanut sauce with the marinade

    This is a great recipe, BUT it is practically identical to one on allrecipes.com that was posted almost 10 years ago...It's unfortunate that there is likely no reference to the original recipe or source in this diet book.

    My Mate and I loved this....marinaded chicken for about an hour... we added green pepper and shrooms....and cooked it on a grill on top of the stove.... It's a keeper !! ps. next time we'll add pineapple or mango too

    I just made this for myself and it was awesome. I will definitely try this recipe again. Next time I'll make sure I have a bell pepper on hand to add to the skewers. I paired a kabob with whole wheat pasta dabbed with olive oil an sprinkled with fresh ground pepper and sea salt. I can't wait to eat the left over kabob for lunch tomorrow!

    My family loved this recipe. I made it tonight and it was really good. I made a double batch of the sauce and skewered zucchini, green peppers and mushrooms and brushed the sauce on before grilling. We do this thing where we rate our food so I know if its something to make again and it got a 9!!! Worth trying, it has a kick! :)

    I make this recipe over and over - my alternative to kebobs is marinating a whole chicken breast all day, then throw it on the 'Q for dinner, grill to perfection and slice over fresh salad with balsamic & olive oil, topped with cracked pepper and a side of brown rice, quinoa or barley.
