Chef Molly Peck Eats Clean and cooks Clean, too!
Dear Tosca,
My name is Molly Peck. I am a chef from Austin, Texas. For the past 6 years of my professional career as a chef, I have been feeding people to the max with the influences of French, Latin, Asian and Southern comfort. I packed each meal with cheese, butter and cream. Because I don't typically eat that way myself, the impact of what I was doing didn't quite hit me (until recently).
As I was walking with a friend, she mentioned to me how discouraged she was that she couldn't lose weight, had no energy, and was suffering through her dairy and gluten allergy. She is not a cook and felt that she couldn't make the switch to buying all the dairy substitutes and pre-made gluten-free products while staying within her budget. I felt horrible for her, and vowed to do some research.
In the process I found your books. They have forever changed my approach to food and how I feed people. I am now implementing Eating Clean into my diet and those of my friends and family. I am two weeks into the process and I have already seen big changes – much happier and healthier bodies. I have also applied Eating Clean to a family that I was hired to cook for. They were extremely happy and I was happy to share my new inspiration with them!
I am now in the process of becoming a private chef and I can't wait to employ your cooking techniques for my prospective employers. Thank you for your hard work and dedication.
